Dinner time stresses me out. Finding something that everyone likes is quite the challenge around here as Caeden and Wayne are super, super picky.
This recipe is a favorite. Everyone likes it, it's super fast and easy to prepare, and most everything you already have in your pantry. I, however, was out of "most everything" and had to go to the store for all ingredients. My grand total was under $10 for this recipe.
Ingredients
- 1 cup honey
- 3/4 cup soy sauce
- 1/4 cup minced garlic (8 to 12 cloves)
- 1/2 cup peeled and grated fresh ginger root
- 1 whole chicken, quartered, with back removed
Directions
Cook the honey, soy sauce, garlic, and ginger root in a small saucepan over low heat until the honey is melted. Arrange the chicken in 1 layer in a shallow baking pan, skin side down, and pour on the sauce. Cover the pan tightly with aluminum foil. Marinate overnight in the refrigerator.
Preheat the oven to 350 degrees F.
Place the baking pan in the oven and bake for 30 minutes. Uncover the pan, turn the chicken skin side up, and raise the temperature to 375 degrees F. Continue baking for 30 minutes or until the juices run clear when you cut between a leg and thigh and the sauce is a rich, dark brown.
Serve with green beans and jasmine rice. YUM!
Looking very good. I think I had better try this out on my clan. Just need more ginger...my freezer stash is almost gone!
ReplyDeleteVal - I tried this recipe this weekend. FANTASTIC!!! My husband couldn't stop complimenting my awesomeness (which is, after all, the entire point of cooking, right??) He even used the left over marinade and did a stir fry with boneless chicken, fresh mango, brocoli, and pecans. Wow. That probably violates some cooking rule about re-using marinade, but oh well. It was delish! Thanks for sharing!
